Pizzamuffins – Pizza Muffins

Et lækkert alternativ til madpakken er pizzamuffins, her med pepperoni, rød peber og skinke. Men kun fantasien sætter grænser for sammensætningen 🙂
Arbejdstid: 15 minutter
Pizzamuffins, 12 stk
2 æg
2 dl mælk
1½ spsk frisk oregano, hakket 1 spk olivenolie
100 g skinkestrimler
50 g bacon eller pepperoni , skåret i mindre stykker
50 g rød peber, hakket
100 g revet ost
100 g mel
100 g fuldkorns hvedemel
2 tsk bagepulver
½ tsk salt
Bland æg, mælk, oregano, olie, skinke, peperoni/bacon, rød peber og ost. Bland mel, fuldkorns hvedemel, salt og bagepulver og hæld det i den våde blanding og rør sammen. Fordel dejen i 12 papirsforme, som er sat i en 12 stks cupcakeform. Drys med lidt ost.
Bag dem ved 190 grader i 15-18 min
TIP: Smør formene før dejen kommes i, så slipper de nemmere efter bagning
Pizza muffins
Very easy to make. 12 muffins
Preparation time:: 15 minutes
Ingredients:
- 2 eggs
- 3/4 cups (2 deciliters) milk
- 1 1/2 tbsp fresh oregano, chopped
- 1 tbsp. olive oil
- 3 1/2 OZ (100 grams) ham strips
- 1 3/4 OZ (50 grams) bacon or pepperoni, cut into smaller pieces
- 1 3/4 OZ (50 grams) red bell pepper, chopped
- 3 1/2 OZ (100 grams) grated cheese
- 3 1/2 OZ (100 grams) all-purpose flour
- 3 1/2 OZ (100 grams) whole wheat flour
- 2 tsp baking powder
- 1/2 tsp salt
Instructions:
- Mix eggs, milk, oregano, oil, ham, pepperoni/bacon, red bell pepper, and cheese. Combine flour, whole wheat flour, salt, and baking powder, and pour it into the wet mixture, stirring together.
- Divide the batter into 12 paper muffin cups placed in a 12-cup muffin tin. Sprinkle with a bit of cheddar or mozarella cheese.
- Bake at 375°F (190°C) for 15-18 minutes.
TIP: Grease the muffin cups before adding the batter to make it easier to remove them after baking.
